Cadydid's Cooking Tips!

There have been so many requests from so many people about meal planning, cooking, picky eaters etc....Here's the deal. Anyone who wants my shopping list, e-mail me at cadydid@nc.rr.com and I'll e-mail it to you. I can post some tried and true healthy recipes that are great with kids.

Let's put the enjoyment back into cooking! Bring on the suggestions and favorite recipes, ladies! I'll start!

My kids LOVE this chicken and it's SO easy!

Buy bone in chicken thighs and/or legs

Place thawed chicken thighs/legs in a rectangle glass baking dish

Sprinkle with garlic powder, garlic salt and paprika.

Bake 350 degrees for 1 hour or until skin is lightly brown.

This is great with a box of couscous (which is REALLY quick to cook) and a steamed veggie.

Dinner is served!

Love it -

We just did a favorite quick recipe in my house - fish tacos. Bake some white fish - we usually do those individually wrapped frozen tilapia fillets (which you thaw and then bake for 8 to 10 minutes on 400). Put in a soft taco shell, top with cole slaw and salsa and you're done.

I usually pair it with corn and bean salad - a can of black beans, half of a bag of frozen corn (cooked), a little olive oil and lime juice and some cilantro if you have some (I found some very handy frozen cilantro cubes at Trader Joe's).

Baked ziti is my fail-safe recipe: Cook a box of ziti or penne. Drain and add a container of ricotta, shredded mozzarella, a jar of sauce and some chopped spinach. Mix it up, dump it in a casserole dish, top with some more cheese and bake covered at 350. (Uncover and broil for a few minutes at the end to brown the top.)
