Cookbook Review: 100-Calorie Snacks
Summer time for moms mean a few things. First, it means fitting into a bathing suit whether we like to or not. Secondly, it may mean a few days or evenings at the pool or playing outside. This means we need some snacks, and not the prepackaged kind that somehow still leaves you hungry.
I received the 100-Calorie Snack Cookbook by Sally Sampson to review. It's a little cookbook, I guess to remind me that this cookbook is for snacks, and not full meals. Remember this point, because I will get back to it later.
It is broken down into the usual chapters - Vegetables, Fruit Desserts, Frozen Desserts - as well as some not so usual chapters - Eggs, Crunchy and Creamy and Cheesy.
And to go along with my infatuation with all things cheesy, I turned quickly to the Creamy and Cheesy chapter. I was looking for things I could pack up in a cooler and take with me to the pool. First up was the cheese tortilla. And not your normal cheese tortilla - one with fat free mozzarella, tomato slices, and chopped fresh basil leaves. My kind of cheese tortilla. But not one for my kids necessarily. And that was the only sticking point of this cookbook. These are some sophisticated snacks, like the next one I tried - Cheese-Stuffed Dates. Take three dates, pitted and add a tablespoon of cream cheese and some zest of an orange. Absolutely delicious.
Cheese-Stuffed Dates
1 tablespoon cream cheese
Freshly grated zest of 1/4 orange
3 Medjool dates, pitted
Place the cream cheese and orange zest in a small bowl and mix together. Divide into 3 portions and stuff inside each date. Eat or cover for up to 5 days.
But as I dug deeper, I did find a few snacks worthy enough for my kids, like the rice crispy treats. These are your normal run of the mill treats, just really scaled down to be 100 calories.
And to revisit what I said earlier about snacks, I also found many of the items in this cookbook could be side items to your main meal. For example, Deviled Eggs with Capers, Anchovies and Olives or Asparagus and Scallops Over Greens. So there is great potential for this cookbook, and many pages are earmarked for me to look back at.
