I can't find the original post for the recipe with the chicken, beans, corn and salsa, so I can't remember who posted it (maybe triangle twins?) but we had it tonight and it was delic!! Everyone loved it. Tomorrow we're going to the fair, but I got all the stuff for Wed to make the chicken artichoke mushroom recipe. I'll post back after that! Thanks guys!

The chicken artichoke recipe was REALLY good. I made rice, and my girls ate mostly the chicken and rice part, then my husband and I loaded our chicken with the artichokes and mushrooms-it was SO good. Even if you have picky eaters, you can just give them the chicken served over rice or noodles without the other stuff. Excellent! Thanks Sarah!
No problem! I just got a copy of one of Sandra Lee's new cookbooks (of Semi-Homemade fame). There's a whole chapter with slow cookers recipes. I'll try some and pass on the good ones. One question: Anybody tried a Dr. Pepper pot roast!?
I recently wrote a blog about my crock-pot love. Its title was "Slow Ride with my Pot" because we know that it's really hard to make crock-pots sound hip. But I LOVE my crock-pot.

Subsequently someone told me about a blog by a woman who is doing 365 days of crockpotting! So it's great to go back and look at her archives and find recipes. I actually made mashed potatoes in my crock once. I'm dying to try her recipe for sweet potatoes. It might become a Thanksgiving classic.

Now, whenever I see tons of ingredients that I don't have, I completely skip it. I'm all for minimal ingredients, quick prep and long cooktime. My favorite recipe goes something like this: hunka meat, dry onion soup mix and beef broth. YUM!!!
I could not agree more-the point of the crock pot to me is to keep things simple. If it's more than 5 ingredients, it may be too much for me-haha!
lilybug, glad you liked the chicken & salsa recipe. It's one of my favs because it scores well on the E:E ratio (ease:enjoyment). It's easy and enjoyable.

I made the best pork tenderloin EVER this weekend. Talk about easy:
Pork tenderloin
3/4 c. red wine (I didn't have any, so I used chicken broth)
1 c. water (I just put in 1 3/4 c. chicken broth)
1 pkg. dry onion soup mix (a must-have for true crock-o-philes!)
3 tbsp. minced garlic (I use the cheating kind, packed in oil in a big jar)
3 tbsp. soy sauce
Now, I think the recipe says to combine the last five ingredients in a bowl, mix them and pour them over the pork. Too much work. I just dumped each ingredient (mostly not measuring) over the pork in the crockpot.
Cook on low for 4 hours.
It was so delicious and juicy that I had TWO helpings on Friday night. Dumped the remaining contents into a Tupperware microwaveable thing. Saturday I heated it up, made a sandwich with the pork and put the juices in a teacup. Dipped the sandwith in the "au jus" and YUMMY!!!!
I am SOOOOO making this this week. I'm all about the crockpot this time of year. I've also found that simple things like spaghetti sauce, chili, soup, etc. all work well to do in the morning in the crockpot. Even though they don't take a lot of time, it's still nice to put it all in there first thing, and have one or two less steps in the evening.
Yummm - this is on my list to make!
I particularly like the addition of red wine, as I will have to open a bottle therefore sip on it that evening.
I think that explains why Diane had to use the broth-she drank all the wine:-)
