Gingery Pork and Cucumber Pitas

I received a subscription to Real Simple magazine for my birthday this year. And the main reason I was excited about it was because of the recipes.

Each month at the back of the magazine are five easy recipes. I'm trying to tackle each one every month.

One hit so far has been the gingery pork and cucumber pitas. The sweetness of the hoisin sauce combines with the vinegary cucumbers for an easy, delicious dinner.

Gingery Pork and Cucumber Pitas

1/4 cup rice vinegar
2 teaspoons sugar
Kosher salt
2 Kirby cucumbers, sliced thin
1 red or green jalapeno, thinly sliced (I usually skip this since my daughter eats the cucumbers on the side)
1 tablespoon olive oil
1 pound ground pork (or ground chicken or turkey)
1/4 cup hoisin sauce
1 tablespoon grated fresh ginger
4 pitas

In a medium bowl, mix the vinegar, sugar and 1/4 teaspoon salt, stirring until the sugar dissolves. Add the cucumbers and jalapeno and let sit, tossing occasionally, for at least five minutes.

Heat the oil in a large skillet over medium-high heat. Cook the meat, breaking it up with a spoon until it is no longer pink. Stir in the hoisin, giner and 2 tablespoons of water.

Fill the pita halves with the pork and cucumber salad.
