Grandma's Pineapple Cake

I just came back from a few days with my grandparents in rural Indiana. They were celebrating their  wedding anniversary, and, as usual, the visit reminded me that I don't see them and the rest of my extended family nearly enough.

I took home a lot of pictures, along with a lot of recipes from my Grandma, who, even in her late 80s, is still canning and freezing about everything you can think of every year. Her strawberry jam and dill pickles are so good.

But there are a couple of things I always hope she'll make when I'm there. One is her fried fish (too busy this weekend with all the festivities for that). Another is her pineapple cake. It's a simple, sheet cake that just reminds me of Grandma's. I don't want to say how many pieces I ate this weekend.

Pineapple Cake

2 eggs beaten
2 cups sugar
2 cups flour
1 No. 2 can crushed pineapple (undrained)
1 t vanilla
1/2 cup chopped nuts
2 t baking soda
1/2 t salt

Mix together, pour into pan and bake 350 degrees for 30 minutes

Icing

8 ounces cream cheese
1 stick margerine, softened (butter will work too)
1 3/4 cup powdered sugar
1 t vanilla

Mix together and spread on top of cake.
