A Great Last-Minute Gift for Everyone, from the Bus Driver to Your Neighbors

A few weeks ago, my neighbor made a treat for all of us and I thought nothing of it and took my container of it to work with me without having any of it. I walked into my office, and was chatting with some coworkers who inquired what treat I had with me to share with them. I opened the container and we all had some.
 
And then we could not stop eating it. And in a matter of minutes and multiple coworkers scarfing it down, I knew I had to get the recipe and recreate this treat, as it makes a great gift for all on your list this holiday season!
 
Carmel Corn
3/4 cup butter or margarine
1&1/2 cup brown sugar
1/3 cup light corn syrup
3/4 tsp vanilla
1/2 tsp baking soda
1- 1&1/2 bags puffed corn (like Chester's)
    
Combine butter, brown sugar, and corn syrup in heavy saucepan. Bring to a boil over medium heat. Boil 3-4 minutes, stirring constantly. Remove from heat. Quickly stir in vanilla & baking soda. Pour half butter/sugar mixture over Half of puffed corn in a large bowl quickly and mix well. Pour into a 9x13 inch pan. Repeat with remaining butter/sugar mixture and remaining puffed corn and pour into second pan. Bake in 250 degree oven for one hour, stirring well every 15 minutes. Remove from oven. Cool and break apart. Store in an airtight container.
 
This stuff is good...I am warning you. Make a batch for yourself and see!
