Meet Amy!
Amy Tadlock is our TriangleMom2Mom mom of the week. She's site administrator for www.johnstonmommies.com.Here's more from Amy ...Mom2Mom: Tell us about yourself.Amy: I'm 31, a single mom of a 2-year-old little boy, Jackson. Jackson was a 31 week preemie, but is
doing great now. We live in Johnston County in the Benson area. I am starting my fifth year of teaching kindergarten. I am also Site Administrator for www.JohnstonMommies.com. JohnstonMommies is a part of The Mommies Network and offers an online support for all moms in Johnston and Northeast Harnett counties, as well as events and activities in the community. Mom2Mom: What's your favorite family place in the Triangle?Amy: Marbles Kids Museum. It's a great place for Jackson to learn and run off energy, but it's so informative and fun for adults too. We love the 3-D movies at the IMAX theater!Mom2Mom: What's your favorite place for yourself in the Triangle?Amy: Honestly, Stone's School Supply. That's crazy, isn't it? I could spend hours on end in there. As a teacher and a parent, Stone's is filled with endless supplies. It's a great resource without having to order online or drive hours. Mom2Mom: What's your favorite ritual with your kids?Amy: Bedtime. It's a chance for Jackson and I to settle down, and bring the day to a close. We start with a bathtime, which is always fun. Then we share a Bible story and say our prayers. It's great watching him learn to say them every night. Mom2Mom: What did you eat for dinner last night? Can you share the recipe?Amy: Crockpot Salsa Chicken. It's a receipe shared by a fellow mommie on JohnstonMommies.com. Very Yummy!Ingredients:1 jar of salsa, 1 can of black beans (drained)1 can of corn (drained), 4-6 chicken breasts (can put in frozen). 1 block of cream cheese (do not add until ready to serve)Cooking Instructions:Cook on low for 8-10 hoursStir in block of cream cheese about 20-30 minutes before you are ready to serve (it is ready once the cream cheese is melted)We usually eat it with sour cream and shredded cheese and top with Tortilla chips. You can do rice as well.Mom2Mom: What's your guilty pleasure? Amy: I type this as I hang my head in semi shame......the Internet! That is my way to get some mommy time.
