Meet Elizabeth!

It's consignment sale season. And in honor of that, we've been highlighting some local moms who own sales or shop them. Today, our TriangleMom2Mom mom of the week is Elizabeth Luttrell, a fan of the giant Kids EveryWear sale which will open in Morrisville to the public on March 24.

Here's Elizabeth ...

Mom2Mom: Tell us about yourself.

Elizabeth: I am a mother of two, a very active member of Kirk of Kildaire Presbyterian church and the owner of a home-based business. One of the reasons I love the Kids Everywear consignment sale is the ability to get great clothes for amazing prices. I can dress my boys in Old Navy, Gap and every other brand name without spending huge amounts of money. They can have a variety of fashions to choose from in their closets. The best part is, we resell most of the clothes we buy at the next year's sale. So we are renting our clothes for just a few dollars a year! Also, the women who run this sale are fantastic. We've become friends over the years I've been volunteering, and I love their philosophy and appreciate their hard work.

Mom2Mom: What's your favorite family place in the Triangle?

Elizabeth: Our favorite place is probably the Apex KiDoKwan, where our boys study Hapkido, a Korean martial art. They study with Master Michael Macario, a Raleigh police officer and black belt in various martial arts. Master Michael instills integrity, responsibility, self-discipline and compassion into all who study there, and he does so with gentleness and humility. The Kwan is a huge, generous and loving family of people.

Mom2Mom: What's your favorite place for yourself?

Michelle: I suppose my favorite place is home. That sounds corny, I know, but really there is nowhere I'd rather be.

Mom2Mom: What's your favorite ritual with your kids?

Michelle: Our favorite ritual with our kids is simple: After dinner we all watch television for 1/2 hour. The boys love electronics of all sorts, but we limit their access to keep them focused on family and friends. We usually sit down together to watch "Good Eats" (on Food Network) or "Mythbusters" (on Discovery), and we talk about all the aspects of the shows. We usually laugh a lot, and often have to run and grab a cookie after watching Alton Brown cook up something delicious.

Mom2Mom: What did you eat for dinner last night?

Michelle: Last night for dinner we ate fresh vegetables from the Farmer's Market (I participate in a produce co-op that shops monthly) and leftover entrees. The best part was the stir-fried fresh green beans! The "recipe" is below.

Stir-fried Green Beans
fresh green beans, trimmed (one handful per person)
1 t. peanut oil (or other vegetable oil)
salt and pepper*
red pepper flakes (optional)

Heat a wok or cast-iron skillet until very hot, almost smoking. Pour the oil in the wok and distribute evenly. Dump in the green beans - no more than four handfuls at a time (three for a skillet) - and stir-fry until beans begin to have browned spots but are still quite crunchy. Sprinkle with salt and pepper(s); serve. *Alternately, you can use soy sauce and pepper; go lightly on the soy and try them as you go.

Mom2Mom: What's your guilty pleasure?

Michelle: I suppose for food my guilty pleasure is Entenmann's Crumb Cake. It feeds my love of carbs and fat and has absolutely no nutritional value. (But we only get these a couple of times each year!) For my spirit and overall mental health, my guilty pleasure is no kids, maybe a little music and a fire in the fireplace, and sitting with my husband reading, knitting and talking.
