Meet Jennie!

Jennie Greene is our TriangleMom2Mom mom of the week. The North Raleigh mom of two contacted me after I wrote about where to find cheap maternity clothes a month or so ago. She and her friend started up an online business selling maternity clothes a year ago.

Here's Jennifer ...

Mom2Mom: Tell us about yourself.

Jennie: Belly Bundles was founded by two best friends in 2008, Carrie Pier, mother of three children (and on the right in the photo) and Jennie Greene, mother of two children with a third on the way (and on the left in the photo). After spending a significant amount of money on maternity clothes and getting very little wear out of them from previous pregnancies, we recognized the need for consigned clothing and accessories. Even though at the time it may feel like an eternity, in the span of our lives, a 40 week pregnancy is really just a blip. During this special time, our size is constantly changing and the wear on the clothes is minimal. We offer new and gently worn maternity wear and accessories and it is based out of Jennie's home and on the Internet at www.bellybundles.com. We like to host monthly open houses for expecting moms in the Triangle area.

Mom2Mom: What's your favorite family place in the Triangle?

Jennie: I would say that one of our favorite spots for some family fun is Marbles Kids Museum. We love it!

Mom2Mom: What's your favorite place for yourself?

Jennie: My favorite place is going to the YMCA everyday to workout. It is my time one to two hours a day and I look forward to it everyday!

Mom2Mom: What's your favorite ritual with your kids?

Jennie: Our favorite ritual is probably morning time and getting ready. My kids are always happy in the am and they love to eat their breakfast!

Mom2Mom: What did you eat for dinner last night? Can you share a recipe?

Jennie: I had filet with sauteed broccoli, a salad, rice and beans for dinner last night.

One of my favorite recipes is Creamy Chicken Enchiladas:
4 skinless, boneless chicken breast halves
1 tbs of butter
2 tbs chopped onion
2 tbs chopped green chiles
3 oz cream cheese
1 cup whipping cream
10 corn tortillas (I use whole wheat)
1 cup grated Cheddar cheese
1 cup grated Monterey Jack cheese with jalapenos
1 cup of Salsa ( I usually make my own)

Cook chicken (poach or grill) until done and cube (can also be put in food processor). In a saucepan, melt butter. Add onion and saute until translucent. Add green chiles and cream cheese, and stir constantly until blended. Remove from heat and stir in chicken. Soften tortillas according to package instructions. Place 3 tbs of chicken in center of each tortilla and some cheese and place, seam side down , in a greased 2 quart casserole dish. Pour whipping cream over enchiladas. Top with any remaining cheese. Bake at 350 for 25 mins or until hot and bubbly.

Mom2Mom: What's your guilty pleasure?

Jennie: My guilty pleasure, (when I am not pregnant) is enjoying good wine with my husband.
