Meet Michelle!

Michelle Zimmerman is our TriangleMom2Mom mom of the week. She's busy helping to organize Twice as Nice Kid's Consignment sale in Apex this weekend.

Here's Michelle ...

Mom2Mom: Tell us about yourself.

Michelle: I've been married to John for 10 years. We have 4 children close in age. Jacob(8), Sarah(7), Seth(6), and Anna(4). Life is a challenge but I could not be more blessed. I am a believer in Jesus Christ and live my life for him. My sister and I own and organize the Twice as Nice kids consignment sale. I love Consignment sales! I love bargains! I love people! I love what I do. Our mission statement is “Twice as Nice is passionate about providing an affordable marketplace for families to buy and sell quality children's clothing, toys and equipment. It is our goal to build relationships with the families we serve and bring glory and honor to our Lord Jesus Christ.”

Mom2Mom: What’s your favorite family place in the Triangle?

Michelle: My favorite family place in the Triangle is Lifetime Fitness. We go as a family and have a blast. We rock climb, play in the gym, and swim year round. The kids love the play area. My husband and I can work out or swim while they are having a blast with structured activities. We love it there. Is it a gym or a resort? I am still unsure.

Mom2Mom: What is your favorite place for yourself in the Triangle?

Michelle: This is a hard question. There will be a season in life when I have time for myself. I am not in that season now. With that said, I do enjoy Dunkin Donuts, Trader Joes or a quiet lunch on occasion. (Salsa Fresh is my favorite)

Mom2Mom: What is your favorite ritual with your kids?

Michelle: My oldest has Aspergers, a form of autism. Rituals are necessary for a child with autism. Our family life is all about rituals. My favorite is stopping at McDonalds on Hwy 64 in Apex to get a .49 cent ice cream cone. My kids think it is the best treat and it is only $3 for my entire family. Did I mention that I love a bargain? ϑ

Mom2Mom: What did you eat for dinner last night? Can you share the recipe?

Michelle: Thanks to e-mealz I made something new.

Chicken Tortilla Casserole
3-4 c cooked diced chicken
1 can cr of mush soup
1 can cr of chick soup
2 c shredded cheddar
1 can Rotel tomatoes, drained
10 pack flour tortillas
1 small bag tortilla chips
------------------------------
1 bag salad greens
1 small tomato
1 cucumber
(Favorite salad dressing)
Mix first five ingredients together, except for 1/2 c cheese. Layer five flour tortillas on bottom of greased 13x9 dish, then 1/2 of mixture, then five more tortillas, then the other 1/2 of mixture. Cover and heat @350 for 40 min. Add reserved cheese and return to oven to melt. Serve with chips.

Toss salad with chopped tomato, sliced cucumber, and dressing.

Mom2Mom: What is your guilty pleasure?

Michelle: My guilty pleasure is a cold Coke. Anyone that knows me will tell you about my love of Coke! A Coke is a reward for me. Sometimes it helps get through a task if I know there will be a cold Coke waiting. The colder the better. The trick is to put it in the freezer for about 10 minutes. Oh….so good!
