What are your quick, healthy meal ideas?
We have tuna melts with 2% cheese on English Muffins once a week.
-Black beans, avocado, scrambled Egg Beaters, and turkey bacon wrapped in a tortilla.
- Breakfast for dinner
- Tortilla soup in the crock pot, vegetarian recipe
- Veggie burgers

We do a lot of salads with tons of fixing and then everybody chooses what they want. It's great especially if you have leftover chicken or steak. Also include cheese, hardboiled eggs, avocados, all kinds of veggies, dried cranberries and other fruit. I usually cut stuff up the night before and then pull it out at dinner time after work.
Fish ... Kroger has individually frozen tilapia filets that you can stick in the oven frozen and it takes about 15 minutes or so. Sometimes we use them as fish tacos (yummy with some cole slaw or peach salsa) or mix the baked fish with a can of diced tomatoes and a few herbs and serve it over rice.
If I make the tacos, I usually pair it with some beans and rice - take a microwave packet of plain brown rice, microwave according to instructions, mix it with a slightly drained can of black beans and mix in a little cilantro (Trader Joe's has frozen cilantro cubes and I just stick in a couple). Top with a little sour cream and salsa.
I'm also big on pre-cooked chicken sausages - aidells, trader joe's (yes, i'm a TJ addict). Saute those with some peppers (you can get cut up frozen peppers at most grocery stores, not as much flavor as fresh, but cheaper) and you've got sausage sandwiches.
on nights that i haven't planned ahead and need a quick meal, i turn to eggs.
i can either make a quiche, omelets, or just scrambled eggs. my kids LOVE scrambled eggs for dinner!
ETA: fish tacos with peach salsa? omgosh!! sounds sooo good!

A unique idea - I made grilled cheese sandwiches in the waffle maker last night. The kids LOVED them and said they only wanted them that way from now on.
Okay, I know this sounds gross but it requires no fresh food and isn't terrible for you. Take a box of whole wheat mac n cheese and after you make it according to the box instructions, add in a can of tuna, a can of low sodium peas and a can of low sodium condensed cream of mushroom soup.
