Wacky Cake

Some days you just need cake.

Back when I was a kid, my mom would pull out this recipe every once in a while. And I've made it a few times with my own daughter. It's easy. You don't need a mixing bowl. And it requires ingredients you probably already have in your pantry.

This isn't gourmet. And it's certainly not the best tasting chocolate cake ever. But when you're in the mood for some cake ... or you're looking for something to while away a rainy afternoon ... this does the trick.

Wacky Cake

1 1/2 cup flour
1 cup sugar
3 Tbs. cocoa
1 tsp. baking soda
1/2 tsp. salt
5 Tbs. vegetable oil
1 Tbs. vinegar
1 tsp vanilla
1 cup cold water

Measure flour, sugar, cocoa, salt and soda directly into 8x8 pan. Mix well. Make three holes in dry cake mix. Measure oil into one hole, vinegar into one and vanilla into the third. Pour water over all and mix in. Stir until lumps are gone (get flour mixture in corners mixed in). Bake 30 minutes at 35. Cool 10 minutes.

You can ice it with homemade buttercream icing or sprinkle it with a little powdered sugar or just eat it out of the pan. Whatever you're in the mood for.
